What are the chances you  will see a restaurant owner initiate a weekly or daily grease trap cleaning? In most cases, the proper time period is one week or less. Fat, Oil, and Grease (FOG) that pass through grease traps are too contaminated for recycling, increase municipal maintenance costs and create tremendous difficulties for treatment at sewage plants. FOG will build up over time, constrict the flow of wastewater and eventually cause sewers to back up into homes, overflow sewage into streams, lakes and rivers.

Traditional  grease traps collect only 85%  of the grease from the effluent. When traditional grease traps do not have regular maintenance then 40-60% of the grease bypasses the traps. This grease is going directly in the sewer or septic system. A full grease trap allows 100% of the fat, oil, and grease to enter  the drain.

Restaurant employees do not want to go near the grease trap due to the rank smell. Many employees have quit their restaurants jobs as opposed to cleaning the grease trap.
